I've got all of these various plants that are half way through "budding" or growing vegieables.  I have to do something whith them now.... I'd rather not let them go to waste. So, I've hanked all the plants out or the ground and am hanging all of them upside down in a dark closet......  I guess I'l perfect making fried green tomotes and will become more knowledgable in hanging all of my herbs upside in a dark closet..... I have a lot of various herbs and vegetables that I'm trying to "dry out."  So, I'll see how it goes, if anyone has any hints about how to dry herbs and vegies, let me know.

We pick our green tomatoes when they are likely to freeze. Sort out the ones that are shiney. They will ripen. The ones that have a flat finish won't but are good for fried green tomatoes or green tomato pie.

This idea is for those with a discriminating palate.   Dice up the green tomatoes, apples, add raisins, dried currents  and add spices to make Mince pie filling.  Hot pack canning or Freeze.    Meat(minced beef) can be added but you MUST pressure can.

I've eaten pickled green tomatoes and they are very tasty. So if you are into pickling you might try that. While you're pickling stuff you might set up a jar or two of eggs. Picked eggs are very good too.
All my taste is in my tools.

Salsa Verde.  Half chopped green tomatoes (instead of tomatillos), half chopped peppers (bell or one of the hot ones, or a combination)  Saute with some oregano and onions, toss in a blender.  Maybe add some chicken broth to thin it a bit.

saute with oregano?  Wow, I'm glad you gave me that idea.... I always thought of the "salsa... green salso, ect...."  as different herbs.... I'm exited about oregano. cheers, bird

Oregano is a great thing! You can use it in many recipes to enhance flavor, but I am always reminded of my youngest brother-
Many years ago, he had a new girlfriend that smoked pot, and he wanted to impress her, so he went out and bought what we called a "dime bag". Lucky for him, he brought it to me to see if it was any good since he didn't partake.
What he had bought on a street corner in Houston was some of the finest.........

OREGANO I have ever cooked with!
I fixed him up with some fair weed and used the oregano in the kitchen!

WOW... I bet that was some seriously expensive oregano!!!!!!  ..... don't think brownies would taste so good with oregano vr. that "oh so horrible drug", marijuana!!!!    Just a personal preference, but, I'm pretty sure those marijuana brownies tasted a lot better!  Of course, I'm saying that as a Chef with an acute palate for food!!!
cheers,
